Chicken Chowder

So to complete my trio of meals made with my extra large chicken I have had a few requests for my chicken chowder recipe.

Now this was another experiment that actually turned out delicious. I found a basic recipe online and then made tweaks to it to make it easier using the things I had available.

I made mine in a slow cooker but you could just as easily do the same in a saucepan on the hob for an hour or so.

Ingredients

  • Left over roast chicken
  • 4 rashers of smoked bacon diced
  • Tinned or frozen sweetcorn
  • 2 leeks sliced
  • 4 potatoes diced into 2cm pieces
  • Onion diced
  • Fresh parsley
  • 1 garlic clove
  • 400mls whole milk
  • 400mls chicken stock
  • seasoning

 

Prepare all your ingredients and add to the slow cooker.

Turn onto high and cook for 6-8hrs or when potatoes are soft.

If making on the hob then fry your onion and bacon in some olive oil first then add the rest of the ingredients.

Serve with some wholemeal bread.
