Coconut caramel bars

Have you ever seen a recipe and thought ooh I am going to try that. I do it all the time but they never turn out like the picture. They usually taste yummy though.

So today I decided to attempt these bars….

I will take you through the steps to make them and we can compare notes!!

90g coconut flour and a pinch of salt

Add 4tbsp coconut oil

2tbsp maple syrup and mix

press into a lined tin and freeze for 30mins

140g dates

3tbsp almond milk

2tbsp cashew butter (homemade)

Puree into a caramel

Spread onto your base

Freeze for 2hrs

Heaped tbsp cashew butter

4tbsp coconut oil

3tbsp cocoa powder

2tbsp maple syrup

Melt over a low heat

remove base from freezer

Cut into fingers

Melted chocolate

Coat fingers and freeze for 30mins

They were extremely yummy but just not the desired end result I had been expecting. My chocolate was a little thick. Maybe more patience was needed or maybe less cocoa powder. Practice makes perfect though right?

I’m looking forward to eating one of these after my race tomorrow.
